| 【目的】认识贵州主要种植的蓝莓品种果实的品质特性，为加工企业选择自己需求的蓝莓品种提供依据。【方法】以贵州主要种植的4个蓝莓品种为研究对象，测定果实外观形态、理化指标、有机酸、花青素、挥发性风味物质，并采用主成分分析法对蓝莓果实进行综合评价。【结果】4个蓝莓品种果实的外观形态、理化指标、有机酸、花青素、挥发性风味物质存在差异，影响蓝莓品质的核心指标是单宁、总酚、矢车菊色素、芍药色素、锦葵色素、挥发性风味物质总量、特有挥发性风味物质总量、总糖、出汁率。芭尔德温属于椭圆形大果蓝莓，灿烂属于圆形中果蓝莓，园蓝与蓝美1号属于圆形小果蓝莓。主成分综合评分由高到低依次是园蓝、蓝美1号、芭尔德温、灿烂。【结论】园蓝、蓝美1号属于加工型蓝莓品种；芭尔德温、灿烂属于兼用型蓝莓品种。 |

| 【Objective】This study aims to understand the quality characteristics of the main blueberry cultivars produced in Guizhou, and to provide a basis for processing enterprises to select suitable varieties according to their needs.【Methods】Four representative blueberry cultivars widely planted in Guizhou were selected as research objects. The fruit appearance, physicochemical indicators, organic acids, anthocyanins, and volatile flavor compounds were measured. A comprehensive evaluation was conducted using principal component analysis (PCA).【Results】Significant differences were observed among the four blueberry cultivars in terms of fruit appearance, physicochemical properties, organic acids, anthocyanins, and volatile flavor compounds. The core indicators affecting blueberry quality were tannin, total phenols, cyanidin, peonidin, malvidin, total volatile flavor compounds, total unique volatile flavor compounds, total sugar, and juice yield. Among them, "Baldwin" is a large elliptical fruit variety, "Brightwell" is a medium-sized round fruit variety, while "Gardenblue" and "Lanmei No. 1" are small round fruit varieties. The comprehensive scores ranked the cultivars as follows: "Gardenblue" > "Lanmei No. 1" > "Baldwin" > "Brightwell".【Conclusion】"Gardenblue" and "Lanmei No. 1" are identified as processing-oriented blueberry varieties, while "Baldwin" and "Brightwell" are dual-purpose varieties suitable for both fresh consumption and processing. |
