      【目的】针对‘萨米脱’(Summit)和‘布鲁克斯’(Brooks)甜樱桃采后贮藏过程中易软化、品质劣变快的问题,探究不同贮藏温度对其贮藏品质的影响规律。【方法】以‘萨米脱’和‘布鲁克斯’樱桃为试验材料,设置0 °C、4 °C、10 °C三个温度梯度,测定贮藏42 d内穿刺强度、失重率、呼吸强度、可溶固形物、可滴定酸、果胶及纤维素、丙二醛、及花青素组分含量等指标,解析贮藏温度及品种对采后樱桃品质劣变的影响。【结果】温度对甜樱桃的贮藏品质影响较大,与4 °C、10 °C相比,0 °C温度下更能抑制甜樱桃呼吸作用、减少失重、延缓膜脂过氧化、稳定固酸比,并有效保持果实穿刺强度,保持原果胶、可溶性果胶、纤维素、花青素含量稳定。品种间比较,‘布鲁克斯’较‘萨米脱’相同温度下果胶、纤维素含量,穿刺强度更高。【结论】品种间耐贮性差异显著:通过对不同温度下两个樱桃品种贮藏性能对比分析,‘布鲁克斯’是更适宜不同温度并且保持贮藏品质的品种。
英文摘要:
      【Objective】Aiming at the problems of easy softening and rapid quality deterioration of 'Summit' and 'Brooks' sweet cherries during postharvest storage, this study intended to explore the effect law of different storage temperatures on their texture and storage quality.【Method】Taking 'Summit' and 'Brooks' sweet cherries as experimental materials, three temperature gradients (0 °C, 4 °C, 10 °C) were set. Indicators including peel puncture strength, weight loss rate, respiration rate, soluble solids content (SSC), titratable acid (TA), contents of pectin and cellulose, malondialdehyde (MDA), and anthocyanin components were determined within 42 days of storage, so as to analyze the effects of storage temperature and cultivar on the postharvest quality deterioration of sweet cherries.【Result】Temperature had a significant impact on the storage quality of sweet cherries. Compared with 4 °C and 10 °C, storage at 0 °C was more effective in inhibiting the respiration of sweet cherries, reducing weight loss, delaying membrane lipid peroxidation, stabilizing the SSC-TA ratio, effectively maintaining the peel puncture strength of fruits, and keeping the contents of pectin (including protopectin and soluble pectin), cellulose, and anthocyanins stable. In terms of cultivar comparison, under the same temperature, 'Brooks' had higher contents of pectin and cellulose, as well as higher peel puncture strength than 'Summit'.【Conclusion】There was a significant difference in storage tolerance between cultivars: Through the comparative analysis of the storage performance of the two sweet cherry cultivars under different temperatures, it was found that 'Brooks' was more suitable for storage under various temperature conditions and could better maintain texture and storage quality.
