| 摘要:【目的】玉屏黄桃属于“锦绣”黄桃品种,贵州省玉屏县独特的气候和环境条件造就其优异品质,研究旨在摸清玉屏黄桃品质情况,同时建立一套玉屏黄桃果实综合品质评价方式,为黄桃的高效栽培和加工利用提供参考。【方法】研究采集玉屏县不同果园的10份黄桃样品,分别从风味、香气、质地和外观4个方面进行感官评价,测定其单果重、硬度、色差等外观指标,水分、总酸、可溶性糖、矿质元素等理化与营养品质指标,并采用变异系数、SPSS相关性分析和隶属函数值进行了品质综合评价。【结果】10份玉屏黄桃果实品质指标变异系数分布在0.4%~54.3%之间,可溶性固形物平均含量为12.3%,总酸平均含量为2.72 g/kg,固酸比平均值为46.15,品尝时软中带硬,甜中带酸,香气浓郁,水分中等,果核较小,可食率均在96%以上,含有较为丰富的可溶性糖、葡萄糖、氨基酸、蛋白质等营养物质,富含矿质元素,钙平均含量为59.22 mg/kg,钾平均含量为1748.27 mg/kg,镁平均含量为54.12 mg/kg。【结论】探明玉屏黄桃感官指标和营养指标总体情况,采用隶属函数法综合评价黄桃的营养品质,总体来看,玉屏黄桃是既适合鲜食又适合加工的优良品种,02号黄桃在感官评价中表现突出,08号黄桃隶属函数值评估果实品质最好。 |

| Abstract:[Objective] Yuping yellow peach is Prunus persica "Jinxiu yellow peach" .Yuping County , Guizhou province have the unique climate and environmental, and these have contributed to excellent quality of Yuping yellow peach.This study aim to find out the quality of Yuping yellow peach and establish a comprehensive fruit quality evaluation method,and then give a provide reference for the efficiency planting,agricultural product processing and utilization of yellow peach. [Methods] Ten samples of yellow peach from different orchards in Yuping County were collected, and sensory evaluation was conducted from four aspects: flavor, aroma, texture and appearance. Appearance indexes such as single fruit weight, hardness and color, physical and chemical and nutritional quality indexes such as moisture content, total acid content, soluble sugar and mineral elements were determined. The quality was evaluated by using coefficient of variation, SPSS correlation analysis and membership function value.[Results] Among the 10 samples of Yuping yellow peach, there were significant differences in the quality of each peach. The soluble solid average content was 12.3%, the total acid average content was 2.72 g/kg, and the solid acid ratio was 46.15. Based on sensory evaluation, all the sample had soft with firm taste, sweet with sour, rich aroma .The fruit pit was small , which made the edible rate was above 96%. It was rich in soluble sugar, glucose, amino acids, protein, mineral elements. The average content of calcium was59.22 mg/kg, the average content of potassium was 1748.27 mg/kg, the average content of magnesium was 54.12 mg/kg. [Conclusion] The sensory indexes and nutritional indexes of Yuping yellow peach were investigated.The quality of Yuping yellow peach was comprehensively evaluated by membership function method. No. 02 yellow peach had outstanding performance in sensory evaluation, and No. 08 yellow peach had the best membership function value in evaluating fruit quality.which provided data support for efficient cultivation, storage and processing of Yuping yellow peach. |
