| 黑蕊猕猴桃(Actinidia melanandra)为新型的小型食用猕猴桃。本文观察了黑蕊猕猴桃从花后坐果到果实成熟过程中的形态转化,测定了不同生长阶段果实的主要营养成分含量、果肉色泽和色素含量的变化。结果表明,黑蕊猕猴桃果实纵径和横径有3 次快速生长期,且纵径增长更快;单果质量和体积的增长曲线均略呈“S”形,授粉后75 d内果实迅速膨大,采收期在授粉后83-90 d。果实的可溶性固形物、可溶性总糖和总酸含量呈逐渐上升的趋势,维生素C和蛋白质含量在成熟后期有所下降,灰分和干物质含量有所上升。从授粉后75 d至果实成熟,花青素含量显著上升,花青素与叶绿素比值升高,导致果实果皮、果肉变为紫红色。 |

| Actinidia melanandra is a newly developed small-sized edible kiwifruit type. The fruit morphological changes from pollination to ripening, and the contents of main nutritional components flesh color and pigment at different growth stages were inventigated. The results showed that there were three rapid growth periods in the longitudinal diameter and transverse diameter of the fruit, with the former increased faster. The growth curves of mass and volume of single fruit presented as slight S-shaped. The fruit expanded rapidly within 75 days, and the harvest period was 83-90 days after pollination. The soluble solid content, the fruit total soluble sugar and total acid increased generally, the contents of vitamin C and protein decreased gradually. The dry matter and ash content rose throughout the fruit development. The anthocyanins content of the fruit increases significantly from 75 d after pollination to the fruit ripening, and the ratio of anthocyanidin to chlorophyll content is elevated, which results in the skin and flesh changing from green to purple red. |
