| 【目的】为探究不同包装方式对常温贮藏条件下蟠枣采后品质的影响。【方法】以蟠枣为材料,采用微孔保鲜袋和无纺布保鲜袋两种不同包装方式进行包装,贮藏在常温(20.00±0.50)℃条件下,测定基础生理指标和氧化代谢相关指标。【结果】结果表明,微孔膜包装组常温贮藏的蟠枣呼吸强度和失重率显著低于无纺布包装组(P<0.05);并且微孔膜包装能够维持蟠枣果实硬度,控制失重率的增加,延缓VC含量的下降;贮藏第15天时,与无纺布组相比,微孔膜组丙二醛(MDA)和过氧化氢(H2O2)含量分别降低了8.6%和37.11%,显著抑制MDA和H2O2含量的增加;活性氧代谢相关酶活性测定结果显示,微孔膜包装蟠枣能有效促进过氧化氢酶(CAT)活性的升高和多酚氧化酶(PPO)活性的降低。但在贮藏后期,无纺布处理组能够延缓蟠枣腐烂率上升。综合来看,微孔膜包装虽然在一定程度上会增加腐烂的风险,但也能够保持较多的果实品质和抑制细胞氧化衰老。【结论】该研究以期为蟠枣常温贮藏保鲜提供了不同包装方式下品质变化的理论依据。 |

| In order to investigate the effect of different packaging methods on the postharvest quality of coiled jujube under room temperature storage conditions. In this study, Tianjin Jinghai jujube was used as the material, stored at room temperature (20.00±0.50℃), and two different packaging methods, namely, microporous preservation bag and non-woven preservation bag, were used to preserve and package the jujube, and basic physiological indexes and oxidative metabolism-related indexes were measured. The results showed that the respiration intensity and weight loss rate of coiled jujube stored at room temperature in the microporous film packaging group were significantly lower than those in the non-woven fabric packaging group (P<0.05); and the microporous film packaging was able to maintain the hardness of coiled jujube fruits, control the increase in weight loss rate, and delay the decline in the content of VC; on the 15th day of storage, compared with the non-woven fabric group, the content of MDA and H2O2 in the microporous film group was reduced by 8.6% and 37.11%, respectively, which significantly inhibited MDA and H2O2. The increase of MDA and H2O2 content was significantly inhibited; in addition, the enzyme activity indexes related to reactive oxygen metabolism showed that microporous film packaging coiled jujube could effectively promote the increase of CAT activity and the decrease of PPO activity. However, in the late storage period, the nonwoven treatment group could delay the increase of rotting rate of coiled jujube. In conclusion, although microporous film packaging may increase the risk of rotting to a certain extent, it is also able to maintain more fruit quality and inhibit cellular oxidative senescence. This study provides a theoretical basis for the quality change of coiled jujube under different packaging methods for ambient storage and preservation. |
