      【目的】为了比较贵州11个不同产地中国樱桃果肉香气成分的差异性。【方法】采用气相色谱-质谱联用(GC-MS)技术检测不同产地中国樱桃果肉的香气成分,结合正交偏最小二乘法判别(OPLS-DA)分析与相对气味活度值(ROAV)分析这两种化学计量学方法进行分析。【结果】通过GC-MS共鉴定出85个香气成分,不同产地共有香气成分4个,包括苯甲醛、法尼醇、对二甲苯、L-芳樟醇; 构建OPLS-DA模型,预测准确率高达99.4%,根据变量投影重要性值VIP>1,且P<0.05筛选出11种差异性香气物质,包括五氯烷、二十七烷、二十八烷、二十九烷等差异性香气物质;通过ROAV分析,识别出(E)-香叶醇等18种关键香气成分(1≤ROAV≤100),对构成中国樱桃果肉的香气特征具有重要影响。【结论】本研究通过GC-MS技术结合化学计量学方法,系统分析了贵州11个不同产地中国樱桃果肉中香气物质的差异及香气特征,可为中国樱桃的品质评价与地域特色鉴别提供有力的科学依据。
英文摘要:
      【Objective】In order to compare the variability of aroma substances of Chinese cherry pulp from 11 different origins in Guizhou Province.【Methods】Gas chromatography-mass spectrometry (GC-MS) was used to determine the volatile aroma components of Chinese cherry pulp from different origins, and two chemometric methods, orthogonal partial least squares discrimination (OPLS-DA) analysis and relative odor activity value (ROAV) analysis, were used for the analysis.【Results】A total of 85 aroma substances were identified by GC-MS, and 4 aroma substances were common to different origins, inclusive of Benzaldehyde, Farnesol, p-Xylene, and L -linalool. The OPLS-DA model was constructed, and the prediction accuracy was as high as 99.4%, and 11 differentiated aroma substances were screened out according to the variable's projected importance value of VIP>1 and P<0.05, inclusive of Pentacosane, Heptacosane,Octacosane, Nonacosane and other differential aroma substances; 18 key aroma components (1≤ROAV≤100), including (E)-geraniol, were identified by ROAV analysis, which had an important influence on the aroma characteristics of Chinese cherry pulp.【Conclusion】In this study, the differences of aroma substances and aroma characteristics in the pulp of Chinese cherries from 11 different origins in Guizhou were systematically analyzed by GC-MS technology combined with chemometrics, which can provide a powerful scientific basis for the quality evaluation and identification of regional characteristics of Chinese cherries.
