      明确沃柑果实适宜的贮藏温度和采收期,为广西沃柑果实的采收和贮藏提供理论依据。以南宁沃柑为试验材料,设置2个贮藏温度和5个采收期,进行贮藏过程中果实品质分析。结果表明,2-4℃贮藏的果实,贮藏后期会出现冷害,其失重率、色差指数、果糖和葡萄糖含量显著低于6-8℃,而乙醇含量显著高于6-8℃,6-8℃是较为适宜的贮藏温度。12月2日和12月22日采收的果实,色差指数、可溶性固形物和蔗糖含量低,可滴定酸和抗坏血酸含量高,乙醇和乙醛生产速率最慢;3月11日采收的果实,腐烂率、失重率以及乙醇、乙醛生产速率最高,可滴定酸和抗坏血酸含量低。1月中旬至2月中旬采收的果实腐烂率和失重率低,着色好,可溶性固形物、可滴定酸和抗坏血酸含量相对高,乙醇和乙醛生产速率较慢,是适宜的采收贮藏期,在6-8℃条件下贮藏不宜超过120 d。

      In this study, the suitable storage temperature and harvest time of Orah Mandarin fruit was clarified, so as to provide theoretical basis for the harvest and storage of Orah Mandarin fruit in Guangxi. The fruit quality of Nanning citrus was analyzed by setting 2 storage temperatures and 5 harvest periods. The results showed that cold damage occurred in fruits stored at 2-4℃, and the weight loss rate, color index, ascorbic acid, fructose and glucose contents were significantly lower than those stored at 6-8℃. The contents of titrable acid, citric acid and ethanol were significantly higher than 6-8℃. The overall score is lower than 6-8℃.During 6-8℃ storage, the fruits collected on December 2 and December 22 had low content of color difference index, soluble solids and sucrose, high content of titrable acid and ascorbic acid, and the slowest production rate of ethanol and acetaldehyde. The fruit harvested on March 11 had the highest decay rate, weight loss rate, ethanol and acetaldehyde production rate, and low titrable acid and ascorbic acid content. The fruit harvested from mid-January to mid-February has low decay rate and weight loss rate, good coloring, relatively high contents of soluble solid, titrable acid and ascorbic acid, and slow production rate of ethanol and acetaldehyde, which is a suitable harvesting and storage period, and should not be stored for more than 120 days at 6-8℃.
