      橄榄是我国南方特有果品,也是福建省特产名果。随着对橄榄研究地不断深入,橄榄的药用价值、营养价值和保健价值逐渐被社会认可,市场对橄榄的需求量越来越大。由于橄榄产业发展相对滞后,橄榄在采后保鲜领域研究较少,易出现果实腐烂变质等现象,影响橄榄果实商业价值。为助推福建省橄榄产业发展,本文总结橄榄在物理保鲜、化学保鲜、生物保鲜等几个方面的保鲜技术研究进展,分析各项保鲜技术的利弊和推广应用的可行性;同时梳理出橄榄保鲜领域目前存在的主要问题,并展望橄榄保鲜技术未来研究发展方向,以期为橄榄保鲜技术进一步发展提供研究思路。
英文摘要:
      Chinese olives are a unique fruit in southern China and a famous specialty fruit in Fujian Province. With the continuous deepening of research on Chinese olives, their medicinal, nutritional, and health benefits are gradually recognized by society, and the demand for Chinese olives in the market is increasing. Due to the relatively backward development of the Chinese olives industry, there is limited research on post harvest preservation of Chinese olives, which can lead to phenomena such as fruit decay and deterioration, affecting the commercial value of Chinese olives fruits. To promote the development of the Chinese olives industry in Fujian Province, this article summarizes the research progress of Chinese olives preservation technologies in physical preservation, chemical preservation, biological preservation, and analyzes the advantages and disadvantages of each preservation technology and the feasibility of its promotion and application; At the same time, identify the main problems currently existing in the field of Chinese olives preservation, and look forward to the future research and development directions of Chinese olives preservation technology, in order to provide research ideas for the further development of Chinese olives preservation technology.
