| 香气是挥发性气味物质的总称,研究菠萝香气对提高菠萝品质及选育优良品种具有重要意义。本研究以广西龙州的10个菠萝品种(芒果、黑皮、红密、神湾、西瓜、小目手撕、黄金、台农17号、大目手撕、无刺卡因)为研究材料,采用顶空固相微萃取-气相色谱-质谱法检测其成熟期菠萝果实的挥发性香气物质,结合主成分分析(principal component analysis,PCA)、系统聚类分析(hierarchical cluster analysis,HCA)和正交偏最小二乘法-判别分析(orthogonal partial least squares discrimination analysis,OPLS-DA)等多元统计分析方法展开综合分析评价。结果表明:10个菠萝品种共鉴定出60种香气物质,酯类22种,酸类7种,酚类7种,醇类9种,烃类9种、酮类2种、醛类1种和其他类香气物质3种。通过主成分分析提取出5个主成分,综合得分从高到低依次为为黄金>芒果>红蜜>黑皮>神湾>无刺卡因>西瓜>小目手撕>大目手撕>台农17号。所建立的OPLS-DA模型可以将10个菠萝品种明显区分为2类,且模型可靠,本研究鉴定出4种香气组分区分不同品种的关键化合物,分别为棕榈酸乙酯、乙酸乙酯、油酸乙酯、9-十六碳烯酸乙酯。10个菠萝品种果实香气成分种类及相对含量具有明显差异,酯类是主要香气成分和香气产生差异的主要贡献者,可为菠萝杂交育种提供科学依据。 |

| Aroma is the general term of volatile odors. It is important to study the aroma of pineapple for improving the quality of pineapple and breeding good varieties. 10 kinds of different varieties of pineapple (Mangguo, Heipi, Hongmi, Shenwan, Xigua, Xiaomushousi, Huangjin, Tainong No.17, Damushousi, Wucikayin) from Longzhou in Guangxi were used as research materials. The volatile aroma substances of pineapple fruits at mature stage were investigated by gas chromatography-mass spectrometry (GC-MS) coupled with headspace solid-phase microextraction (HS-SPME) and using principal component analysis (PCA), hierarchical cluster analysis (HCA) and orthogonal partial least squares discrimination analysis (OPLS-DA) to evaluated the aroma components of different pineapple varieties. The results showed that a total of 60 aroma compounds were detected, including 22 esters, 7 acids, 7 phenols, 9 alcohols, 9 olefins, 2 ketones, 1 aldehydes and 3 other substances. 5 main composition were extracted by principal component analysis, the comprehensive scores of principal components from high to low were Huangjin, Mangguo, Hongmi, Heipi, Shenwan, Wucikayin, Xigua, Xiaomushousi, Damushousi and Tainong No.17. The established OPLS-DA model could obviously distinguish 10 pineapple varieties into 2 classes, with good reliability. A total of 4 aroma components, hexadecanoic acid ethyl ester, ethyl acetate, ethyl oleate, ethyl 9-hexadecenoate were identified as the key compounds to distinguish different pineapples. There were significant differences in aroma components and relative contents among 10 pineapple species and esters was important contributors to the main aroma components and aroma differences, which provided scientific basis for cross breeding of pineapple. |
