      摘要:【目的】对红皮龙眼果肉的挥发性成分进行鉴定和分析,以揭示红皮龙眼香气成分,以期为龙眼育种、品质改良和产品开发提供理论参考依据。【方法】采用顶空固相微萃取-气相色谱质谱联用技术(HS-SPME-GC-MS),对红皮龙眼和四季蜜龙眼(对照)果肉挥发性成分进行检测,并通过主成分分析、正交偏最小二乘法判别分析,以VIP≥1,p<0.05,差异倍数≥2或≤0.5为基准,筛选差异代谢物,对结果进行差异成分分析。【结果】红皮龙眼和四季蜜龙眼共检测出76种挥发性成分,包括27种酯,1种胺,2种醇,10种芳烃,2种酚,3种醛,1种酸,8种萜,5种酮,13种烷烃,2种烯烃,2种杂环化合物。筛选到44种差异化合物,其中酮类中的1-(2-羟基-5-甲基苯基)-乙酮只在四季蜜龙眼中检测到,14种挥发性物质只在红皮龙眼中检测到(甲基丁香酚、丁酸甲酯、3-羟基丁酸乙酯、月桂酸乙酯、十四烷酸甲酯、十四烷酸乙酯、乙酸正丙酯、异榄香素、新松香二烯、3-羟基-3-甲基-丁酸、3-(4-异丙基苯基)-2-甲基丙醛、(E)-茴香脑、3,4-二甲基苯甲酸甲酯、十八酸乙酯),61种挥发性物质是红皮龙眼和四季蜜龙眼共有的。【结论】红皮龙眼和四季蜜龙眼的组间差异较大,可按照品种类型进行区分,红皮龙眼的差异成分种类比四季蜜龙眼多,果肉挥发性成分含量较高的是榄香素和己酸乙酯。

      Abstract:【Ojective】The volatile components of red pericarp longan and Sijimi longan were identified and analyzed in order to reveal the aroma components of Longan, in order to provide reference for breeding, quality improvement and product development of Longan. 【Method】The volatile aroma compounds in longan of different cultivars were determined using headspace solid phase micro- extraction (HS- SPME) and gas chromatography- mass spectrometry(GC-MS) ,and through the principal component analysis partial,least square discriminant analysis (OPLS-DA),with VIP≧1, P <0.05 ,fold change≧2 or≦0.5 as the basis to screen differential compounds and analyse results of different components.【Result】A total of 76 volatile components were detected, including 27 esters, 1 amine, 2 alcohols, 10 aromatics, 2 phenols, 3 aldehydes, 1 acid, 8 terpenes, 5 ketones, 13 alkanes, 2 alkenes, and 2 heterocyclic compounds. Further,44 volatile components with different characteristics are screened.1- (2-hydroxy-5-methylphenyl) -ethyl ketone in the ketones was only detected in Sijimi longan. 14 volatile substances were detected only in red pericarp longan (methyl eugenol, methyl butyrate, ethyl 3-hydroxybutyrate, ethyl dodecanoate, methyl myristate, tetradecanoic acid ethyl ester,n-propyl acetate, isoelemin, neorosin diene, 3-hydroxy-3-methyl-butyric acid, 3- (4-isopropyl phenyl) -2-methylpropanal, (E) -anisole, 3, 4-dimethylbenzoate, octadecanoic acid ethyl ester), Sixty one volatile substances are common to red pericarp longan and Sijimi longan.【Conclusion】The visual difference between the two groups was obvious, which can be distinguished according to the variety type.There were more different metabolites in red pericarp longan than Sijimi longan.The highest metabolites in the red pericarp longan were elemin and ethyl caproate.
