      新梢管理是葡萄栽培的关键环节之一,直接影响葡萄果实品质和产量。本研究以酿造优质白兰地的主要葡萄品种‘白玉霓’为试材,新梢管理期对‘白玉霓’保留不同新梢密度,研究其对果实病害、风味品质和葡萄酒香气的影响。结果表明,新梢密度对‘白玉霓’葡萄酒香气成分种类总数和分类含量比例影响不大,适当降低新梢密度可提高‘白玉霓’果实还原糖含量,降低病穗率,显著增加葡萄酒香气总含量和酯类含量。主成分分析结果表明,不同新梢密度对‘白玉霓’葡萄酒香气影响较大,其中新梢密度9条/m‘白玉霓’葡萄酒香气总含量和果香显著提升。
英文摘要:
      New shoot management is one of the key aspects of viticulture, which directly affects the quality and yield of grape berries. In this study, the main grape variety ''Ugni Blanc'' for producing high-quality brandy was selected as the experimental material. Different densities of new shoots of ''Ugni Blanc'' during the new shoot management period were retained, and the effects of the treatments on the rate of fruit disease, fruit flavor quality, and wine aroma were studied. The results showed that the density of new shoots had little effect on the total number of aroma components and the proportion of categorized contents in ''Ugni Blanc'' wine, and that lowering the density of new shoots could increase the content of sugars in ''Ugni Blanc'' fruit, reduce the rate of disease, and significantly increase the total content of aroma and ester content in wine. The results of principal component analysis showed that different new shoot densities had a significant effect on the aroma of ''Ugni Blanc'' wine. ''Ugni Blanc'' wine aroma content and fruity flavor were significantly increased with a new shoot density of 9 shoots/m.
